@Pippinwhite -- That does sound good. A locally owned doughnut shop does key lime doughnuts that have a lime custard filling. It's like a boston cream pie custard with lime flavoring and zest. They then do a cream cheese frosting and graham cracker sprinkles on top. They are absolutely delicious!

A good variation on these would be cupcakes with a key lime curd filling. I did this with lemon cupcakes and they were a big hit. A key lime buttercream uncooked frosting would also be good on these.

A lemon or lime curd can be a little fiddly, but with patience and care, they usually turn out all right.

It's a great surprise to bite into a cupcake and get that delicious curd in the middle!
